Ne Me Quitte Pas Catering was established in 2005 and although we have never advertised, we continue to grow through word-of-mouth and client referral alone. the chef & inspiration
Chef Paul Spillane’s first culinary inspiration came from a deep love of cooking born out of generations of family tradition. The chef’s mother Suzanne, and mémère Eva Richer Montagne, regarded food and family above all things. This deep respect for food and connections has had a lasting effect on Paul. Suzanne (among the youngest of eighteen children) was raised on a large dairy farm in northern Vermont. This extraordinary (and very large) family was completely self-sufficient, raising their own livestock, farming their own grains and produce, producing their own dairy products, and preparing three meals each day from these ingredients. Throughout his life (and to this day) Paul has enjoyed his father’s sprawling gardens filled with spring, summer and fall vegetables, fruits, herbs and greens. Many of his recipes, including home-baked breads, pies, cakes and pastries were passed on from his mother, who will always be found in the family kitchen. It is from this rich culinary tradition, pride in seasonal and local ingredients and dependence on fully homemade dishes that Paul Spillane takes his inspiration.

We insist on high quality, seasonal ingredients and homemade dishes. If any product can be fully homemade in our kitchens, then we take that extra step to do so. We hate the idea of outsourcing any of our products to other vendors, so we take the time to make it from scratch wherever possible, to ensure that you and your guests enjoy the freshest food of the highest quality.

attention to detail and love of food
We bake all our own breads and pastries, churn our own butters from our own homemade crème fraîche and prepare our own ice creams, gelatos and sorbets. We produce our own ricotta, mozzarella, yogurt, buttermilk and sour cream. We create and hand-roll our own pastas and sauces. We hand-select all our own meats and grind these items in our kitchens to ensure the finest quality ground meats possible.
Whenever possible we work directly with farms and growers whose products we use, so we can see, first hand, how they raise their livestock, grow their produce, mill their grains, brew their beers, produce their wines and so on. Nothing is more important to us than knowing, for certain, how a thing has made its way into our kitchens. If we don’t like the way a thing is done, then we do it ourselves. To some, this may seem unnecessary, but we believe it’s what separates us from the pack. A love of fresh, local and artisanal ingredients, attention to detail and a love of food and tradition means everything to us and it’s our proud commitment to you.

At Ne Me Quitte Pas Catering our mission is to treat you and your guests with the same care and consideration that we would our own family and friends. We do this by offering a true custom catering experience where each menu is designed specifically for each individual client and their guests. We design each new menu from scratch taking into consideration a client’s personal tastes, seasonality of ingredients, the style and type of event and so on. It’s a personalized approach that we think has been overlooked these days.
unique menus just for you & your guests
As a full custom caterer we design one-of-a-kind menus to suite each individual client, so we don't have specific menus to limit your choices. Our menus are never fully duplicated and many of the dishes are original, one-of-kind items, designed specifically to the tastes of the client and those of their guests. In fact, the only time you’ll see a dish repeat itself from one party to the next is when a client specifically requests a menu item they sampled at a previous party we catered. The process of developing a menu for each new client can require some back-and-forth discussion, but it’s a simple and stress-free process that we feel is worth it to help tell our client’s story. We gather as much information as we can to get that story straight.
When designing a menu we ask for any information that can help us do this. ‘What’s the first meal you remember sharing together’, ‘what’s your favorite restaurant’, ‘favorite weekend destination’; whatever will help us develop a menu that’s a perfect offering to you and your guests. We’ll also be looking for the time of day of your reception, number of guests, ages of guests, theme (if any), style preferred (cocktail party, buffet, stations, formal sit-down meal, family style service etc.), approximate budget, as well as an idea of what you and your guests love in a good meal. We offer in-home tastings and whenever possible we prepare items from your own menu options, so you can see our presentation style and sample the flavors. Often times it’s during this process that we fine tune the final menu.
